Sulfites & Tannins in Wine and Beer
Most wines naturally contain sulfites, the most common preservative used to keep wine fresh. Since 1988, the FDA has required U.S. winemakers to include preservatives like sulfites, even though they already occur naturally.
It’s estimated that up to 13% of people have a sensitivity or intolerance to sulfites and tannins, which can lead to headaches, facial flushing, or indigestion. While winemakers love tannins for the flavor, structure, and protection they give wine, these compounds—especially in red wines—can also trigger what many call the “red wine headache.”
Interestingly, red wines often contain less sulfites than whites, since their natural tannins act as a preservative. Still, the combination of sulfites and tannins can be enough to cause discomfort for many wine lovers.
Beer can have similar effects. Phenols and tannins—naturally found in barley and hops—help preserve and flavor beer but can also contribute to reactions. Even beers labeled “no added sulfites” still contain sulfites formed naturally during fermentation.
